Waffles make a lovely Sunday breakfast or Brunch item. And if you want to feel a little less guilty about throw in a bit of oats into the mix and make it healthy. I have to say this is not for everyone. My husband was after my life to make Oatmeal Waffles for him. I’d been putting it off for a while until I gave in and finally one Sunday morning after I’d put our 8month old daughter for her morning nap I decided to get to work. If you’re really picky about your Waffles and just like them Belgian, these may not be for you, if you’re open to trying out new flavours, it’s worth a shot. I topped this with all sorts of things ranging from butter, to Nutella. It makes a healthy Waffles Breakfast, but not and indulgent one.
Ingredients:
112g flour
50g oats
1.5tbsp light brown sugar
1tsp cinamon
3/4tsp baking powder
1/2tsp baking soda
1/4tsp salt
165ml buttermilk
1 eggs
42g melted butter
1/4 tsp vanilla
70g raisins
Directions:
- Stir dry ingredients together except the raisins
- Add buttermilk, eggs, butter and vanilla and stir until smooth
- Finally add the raisins and let the batter rest for 5mins
- Preheat waffle iron to your desired setting
- When the iron is ready is ready pour about 3 tbsp into the centre of the lower grid. Spread the batter using a heat proof spatula leaving about 1cm space from the edge
- When the waffles are done open the lid and carefully remove the baked waffles
- These make 5 Waffles, so double or triple the recipe as you need
