Banana Chocolate Chunk Bread

Who doesn’t love bananas and chocolate together? Very few people I would think? If you’re one of those few people this blog entry is not for you then 🙂 But I would still urge you to set your banana chocolate issues aside and give it a try. Sweet breads are wonderful comfort food to have. I tried this recipe 4 years ago and have always had people say wonderful things about it. I have fond memories of when my husband and I were newly married and living in a little studio in Dubai. My sister and her family were visiting Dubai and I made this as a snack and it was placed on the kitchen counter right by the entrance to the house, anyone walking in or out would be taking off big chunks of the bread and chowing it down. It was just comforting! 




Ingredients:
2 cups flour
2 tsp baking powder
4 1/2 oz oil
1 cup sugar
4 ripe bananas
2 eggs lightly beaten
1 tsp vanilla
1 cup chocolate

Directions:

  1. preheat oven to 180 C
  2. Sift flour, baking poweder into large bowl
  3. Mix oil sugar, banana, eggs, vanilla and chocolate
  4. Add to dry ingredients and stir to combine being careful not to over mix.
  5. pour batter into non-stick or greased loaf tin and bake for 1 hr and 15mins or until skewer comes clean

Line a loaf tin with parchment paper and pour the batter in
