Chocolate Caramel Cheesecake

 

We’ve been having a lot of farewells in the office lately, late night dinner parties and teary Goodbyes! In these situations I find it best to dive into baking, keep myself busy and stop myself from thinking about the sad things in life where ‘life-must-go-on’ and ‘people-move-on’!

 

 
The boss who I very gladly bake for, decided to move out of the company, after being on the brand for 4 years. And while I only worked with him for 8 months, those 8 months were some of the best in my career. So for me it was a moment of utter sadness to see him leave. And if it wasn’t enough that he was leaving the company, he was ALSO leaving the country, going far far away – like 16 hours away! Talk about being easily accessible!!! 
 
We hosted a pot luck for him at the office. We wanted to make it personal not just take him out for dinner, so instead we all wanted to show him how much we cared so spent sometime in the kitchen to connect the dish and him together and what it meant for us. The lunch turned out great, and we had enough food to feed an army. I did what I do best – dessert so I went for a Chocolate Caramel Cheesecake. 
 
It’s really very simple to make and probably one of the fastest deserts I have ever made with a bit of cheating on the caramel part. I decided to go for the canned stuff instead of making it from scratch!!! 
 
For the chocolate coating use a ganache – i ended up using melted chocolate so when it set it was a bit hard to cut the cake! Looked gorgeous though:)
 
Ingredients: 
397ml Caramel or Dulce de Leche
300g melted chocolate
Directions:
  1. Bake the NY Cheesecake and let it cool completely, preferably overnight in the fridge
  2. Once cool, pour with melted chocolate on top or ganache if you are using, let it set and come together with the cheesecake
  3. Finally top the cake with Caramel and spread evenly on the top to cover all around
  4. Let is sit in the fridge for a few hours to let all the layers come together and serve cold

Once set, pour the top with Caramel and let it sit for 2 hours before serving
