I’ve been missing for a while! I’ve been in the swamped in the middle of revamping my blog and trying to find a new identity. For those of you who have been frequent visitors to my blog until a month ago it was called battermeup.blogspot.com . After 4 years I felt I needed a change, and wanted something with more ,ummm…identity? Something more memorable and fun and a few days of thinking, pondering, discussions with my husband and it came down to The Bakery Witch. For now, since I’ve been missing in action on my recipes, let me share one of my favourite desserts, which was a first time for me and turned out great.- PECAN PIE 😀
You’ve heard of my fear of pies! I can never seem to get the crust right, but this time I managed to get that set as well, I’ll share that recipe with you soon. The pie filling is a lovely moist sweet filling giving the right amount of crunch from the Pecans. The recipe is simple, easy and tastes delicious! What more are we looking for right?
My husband and I finished the whole Pie by ourselves, mostly my husband. But it really is that good that you want to keep eating.
Ingredients:
1 9″ pie crust, blind baked
1 C Corn Syrup (Karo in this case would be best)
3 eggs
1/2 C white sugar
1/2 C brown sugar
2 Tbsp butter
1 tsp Vanilla
1 1/2 C chopped Pecan and about 6 whole for decorating the top
Direction:
- Pre-heat Oven to 190 C/ 350F
- Mix corn syrup, eggs, sugar, butter and vanilla
- Stir in the chopped Pecans and pour onto the pre-baked Pie Crust
- Decorate the top of the filling with 4-6 full pecans
- Pop into the oven and bake for 1 hr
- If you find the crust browning too fast then cover with sides with foil while the Pie continues to bake
- The pie is done when the center feels springy to touch or it has reached 200F temperature in the middle
- Let it cool down for a few hours and then serve warm with Vanilla Ice cream
