Pound Cake

 

Pound cake is probably the simplest and quickest cake to put together and toss in the oven. Did you know pound cake gets its name because the recipe has a pound of everything! How very simple! I’ve only faced one problem with Pound cake’s; mine never seem to rise as much as I would like it to. So do let me know if yours have and if I’m doing something wrong.
I use one of an old favourite my mother use to bake. It is dense and sweet. The other recipe I also like to use is from Joy of Baking

Whisk the eggs together to break them and then bring in all the ingredients together

Pour into a loaf tin pan and bake

Let it rest once baked and cut slices and have with tea or save for some trifle

Soft crumbly pound cake



Ingredients:
2 cups flour
2 cups sugar
1/2 pound butter
6 eggs
1/8 tsp salt

Directions:

  1. Mix all ingredients together on high speed of an electric mixer until combined well
  2. Bake in a tube pan for 1 1/2 hr at 150 C
  3. If the cake starts to bake quickly at the top and browning then cover with a foil so it does not become too dark and over cooked
  4. This is a dense pound cake, if you are looking for a light pound cake I HIGHLY recommend the  Joy of Baking version.
