Banana and caramel, toffee or butterscotch. You just can’t go wrong with this combination can you? What’s not to like about it? My husband loves anything with bananas so I thought I’d make him a treat for the weekend. These muffins are ridiculously moist because of the bananas and the butterscotch melts just perfectly making it slightly gooey. If you don’t want all your butterscotch to settle to the bottom on the muffin, mix the butterscotch with the dry ingredients. That does tend to help. Enjoy!
Ingredients:
3 ripe bananas (I have used regular ones as well and they turn out just fine)
2 eggs
1/2 C oil
1/2 C sugar
2 C flour
1/2 tsp baking soda
1 tsp baking powder
1 or 1 1/4 C butterscotch morsels
Directions
- Preheat the oven to 200 C/ 400 F
- Mash the bananas, and in a separate bowl beat the oil and eggs
- Put all the dry ingredients together stir, and then add the egg and oil mixture
- Finally add the bananas and butterscotch morsels and fold together making sure not to over mix
- Stir together to mix and make sure you do not over mix, otherwise the muffins will come out tough
- Add the batter into a lined muffin tray and bake for 20 mins
