Oatmeal Muffins

Some mornings you just want to start your day with a muffin without feeling guilty about it. Oatmeal is a nice touch to muffins to get that sugar in; yet feel a tad bit healthy about it. These oatmeal muffins are super moist and freeze really well. I would usually have a batch of these lying in my freezer and my husband and I would take it to work as a snack. 
 

Ingredients:
1 cup oats
1 cup buttermilk
1 cup flour – sifted
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup butter
1/2 cup brown sugar
1 egg beaten

Directions:

  1. Combine oats and buttermilk and soak for 30mins or longer 
  2. Sift flour again with salt, baking powder and baking soda
  3. Add butter, brown sugar and beaten egg to the oatmeal mixture and blend thoroughly
  4. Stir in dry ingredeints and mix just long enough to moisten
  5. Spoon into greased muffin pans and bake at moderate oven for 25mins or until brown
  6. Makes 12 medium muffins
