Some mornings you just want to start your day with a muffin without feeling guilty about it. Oatmeal is a nice touch to muffins to get that sugar in; yet feel a tad bit healthy about it. These oatmeal muffins are super moist and freeze really well. I would usually have a batch of these lying in my freezer and my husband and I would take it to work as a snack.
Ingredients:
1 cup oats
1 cup buttermilk
1 cup flour – sifted
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup butter
1/2 cup brown sugar
1 egg beaten
Directions:
- Combine oats and buttermilk and soak for 30mins or longer
- Sift flour again with salt, baking powder and baking soda
- Add butter, brown sugar and beaten egg to the oatmeal mixture and blend thoroughly
- Stir in dry ingredeints and mix just long enough to moisten
- Spoon into greased muffin pans and bake at moderate oven for 25mins or until brown
- Makes 12 medium muffins
