The company I work for is going through a massive restructure and restructuring always results in layoffs. Obviously the morale was at a high time LOW at the office and the working environment was just depressing right after the announcement. I thought we needed a bit of pick-me-up early morning and nothing can beat sugar making you feel better, so here it was – Nutella filled Cupcakes.
The icing has a tinge of Nutella but the real yummy-ness comes when you bit into the cupcake and Nutella oozes out from it. It just makes things better in life J
There are 2 ways to do fill the Nutella:
- The professional piping bag method (limited filling). Instructions @ Wilton – Cupcake Filling
- Scooping out the center of the cupcake with an apple corer or knife and filling it in (generous filling)
I use the scooping method, I find it faster and I get to fill in more Nutella.
Ingredients
Makes 12
1 cup flour
3 tbsp cocoa
1/2 cup sugar
1.5tsp baking powder
1/4 cup oil
1/2 cup milk
1 egg
1/2 cup Nutella
Frosting
2 3/4 cup icing sugar
1/3 cup butter
1 1/2 tbsp milk
1/3 cup Nutella
3 tbsp cocoa
1/2 cup sugar
1.5tsp baking powder
1/4 cup oil
1/2 cup milk
1 egg
1/2 cup Nutella
Frosting
2 3/4 cup icing sugar
1/3 cup butter
1 1/2 tbsp milk
1/3 cup Nutella
Directions
- Preheat the oven to 170°C (325°F) and line a cupcake tray with paper cases
- Stir together all the dry ingredients: flour, cocoa, sugar, baking powder
- Beat egg and milk together and stir into the flour mixture until just mixed
- Spoon the mixture into the cupcake tray, filling ¾ of each cupcake hole only
- Bake for 20mins until the cupcake feels springy and let it cool completely before filling with Nutella
- Once cooled down, take an apple corer and scoop out the centre and fill with a dollop of Nutella (approximately 1 heaped teaspoon)
- Push the cored cupcake back inside to seal and move to frosting
Nutella Frosting
- Combine icing sugar and butter and slowly pour in milk 1 tbsp at a time. Sometimes 1 tbsp milk is enough to bring all the ingredients together. Beat until fluffy – approximately 3-4 mins
- Stir in Nutella and decorate cupcakes
