Chocolate Chip Peanut Butter Brownie Sundae


If you’ve been following my blog, or randomly reading some entries I had mentioned a company restructure announcement at the end of last year where every one was blue for the longest time. The darkest days are now over for NEARLY everyone and things have turned out wonderfully for me – I can’t complain.  But during the darkest days I did promise friends, on random occasions, I  would host celebratory dinners when it was all over. For some they’ve forgotten so I have time to stretch my legs and relax a bit, for others, they’re cashing in on my promise as soon as they can:)
 
I have my hands full these days, 2 kids, a full time demanding job, and a blog to run I feel any free time I get I deserve to put my feet up and just relax. Sadly, this is not the case just yet, so here I was preparing dinner and dessert on a Sunday night for 3. Honestly, WHO hosts dinner on a Sunday night? Like its not depressing enough to know next morning is Monday. (I’m singing Sunday Bloody Sunday -U2 in my head right now) 
 
And just for this reason I think it’s so important to have Ice Cream on Sunday nights! It completes the weekend and consoles you while you fret about another long week ahead and how Friday lovely Friday is so far away. That, plus I wanted to whip up something very quickly which didn’t require too much effort but was delish! 
 
This gorgeously tasting Brownie Sundae will be a winner at ALL dinner parties, I can promise that. The batter is cooked just enough to form a base and top and give the brownie texture, and the middle remains runny and fudge like. A bit similar to the Molten Cake, but OMIGOD it is actually better ( I never thought I would find anything similar and better to Molten Cake). You must completely trust me on this one and try it. It’s a breeze to make and a real treat to have. A great end to a Sunday night:) 
 
Ingredients
1/4 cup butter (1/2 stick or 56 g)
1 tbsp cocoa
1/3 C chocolate chip plus 3 tbsp for sprinkling
1 eggs
1/2 C sugar
1/2 tsp vanilla extract
1/4 C flour
1 tbsp creamy peanut butter

500 ml Ice Cream (preferably Vanilla based)
 

Directions

  1. Preheat oven to 180 C and butter 3 ramekins and place on a baking sheet
  2. Melt butter and cocoa and 1/3 C chocolate chips in a double boiler
  3. In a separate bowl, beat eggs and sugar until thick and creamy, add vanilla and beat again and then add the cooled melted butter and chocolate mixture
  4. Finally add the flour and fold in until just combined
  5. Divide the batter evenly into the ramekins and sprinkle the remaining chocolate chips on top
  6. Take a dollop of peanut butter and press it into the center of the batter and swirl around concentrating on the center
  7. Bake for 15 mins or until the tops have just formed a crisp layer
  8. Let it cool for at least 15 mins, it will sink in the center making the perfect place for a scoop of ice cream to snuggle into

Whisk sugar and eggs

Should become a chocolate mixture

Add chocolate mixture into sugar and eggs

Gently fold in the flour

Pour into ramekins and sprinkle chocolate chip

Add a dollop of peanut butter and swirl in the center

Bake until just crisp on the top and let it cool so the top sinks

Add a scoop of ice cream in the center and dig in!
