I made Rocky Road around 4 years ago and it was a complete disaster. Well, that’s a bit of an exaggeration, but it just wasn’t as nice as one knows Rocky Road to be. What went wrong? Chocolate! The fact that I didn’t put enough of it to hold everything together. This time round, I was determined to get it right, the chocolate quantity balance with the Marshmallows and the biscuits quantity. My husband doesn’t like Marshmallows, and this was the time to convert him – through a good batch of Rocky Road
I went away for a night with my team, an island retrieve to get together and connect, bond and reflect on how the first half the year has gone – especially with all the restructuring that has taken place. No journey is complete without food, snacks and lots of binging. And that’s exactly what I prepped for, nothing like a tray bake, easy to transport, easy to eat and so very comforting.
This is just a simple recipe, no golden syrup, no additional complicated ingredients, just what is present in your pantry and getting to business. And that’s what I love about this recipe.
Ingredients:
1 1/2 cup marshmallows (small ones)
200g or 1/2 a packet of Digestives (or any tea biscuit) broken into small pieces
670g Chocolate ( Melt this in batches of 167g, 167g and 335g for best results)

Directions:
- Chop all the chocolate up finely and melt in a heat proof bowl over boiling water
- In a bowl add the broken digestives and pour 1/4 of the melted chocolate to cover the biscuit
- Once the biscuits are coated, add the marshmallows and mix through
- Once the chocolate has melted, pour a 1/4 of the melted chocolate into the marshmallows and biscuits, stir to coat everything
- Line an 8×8 square pan with parchment paper and pour the mixture into the pan, spread evenly. If you feel the entire mixture doesn’t fit well, use another baking tray or pan to put the remainder of the mixture
- Pour the remainder of the chocolate on top of the mixture, spread to cover all corners and pop in the freezer to set for at least 2 hours
- Once set, cut up into pieces, I usually get 30 pieces (24 from 8×8 and another 6 from the extra mixture)
