Sour Cream & Cardamom Cake

The thought of a Cardamom can be a bit appalling to some, but I kid you not, this smells so comforting and warm you want to just keep eating it. It’s butter free, which makes it guilt free:) I made this as a single layered cake, strict instructions from husband that he didn’t want anything grand. But next time I can see myself making this double layered and making it look more professional with some extra frosting and decoration. 
 
Ingredients
1 egg
3/4 cup sugar
1 cup flour
1/2 baking soda
1 tsp ground cardamom seeds
200 ml sour cream
 
Directions:
  1. Preheat oven to 180 C/ 350 F. Grease the sides of 8cm round pan and line the base with parchment paper
  2. Whisk the egg and and sour cream together until combined and fluffy
  3. In a separate bowl, mix the dry ingredients: flour, sugar, baking soda, cardamom seeds
  4. Mix the wet and dry ingredients, stirring gently just to coat
  5. Pour into prepared baking tin and bake for 20-25 mins, until a skewer comes out clean
  6. Let it cool and then add top generously with Sour Cream Frosting

Let the cake cool before topping with frosting

Top the cake with frosting and serve at room temperature or cold – tastes great either way
